Healthy Biscuits

 

1. Ingredients:

  • Sugar: ½ cup
  • Cardamom (Elaichi): 4 pods (peeled)
  • Oil: ¼ cup (use heart-healthy oil like sunflower or olive oil)
  • Wheat flour: ½ cup
  • Gram flour (Besan): ½ cup
  • Upma rava (semolina): ¼ cup

Step 1: Prepare the Sugar Mixture

  1. Grind sugar and cardamom together into a fine powder.
  2. Add oil to the sugar mixture and mix until smooth.

Step 2: Prepare the Dough

  1. In a mixing bowl, combine wheat flour, gram flour, and upma rava.
  2. Gradually add the sugar-oil mixture to the dry ingredients and mix well to form a dough.
    • If the dough feels dry, add 1–2 tablespoons of water or milk (optional).
    • The dough should be firm yet pliable.

Step 3: Shape the Biscuits

  1. Divide the dough into small portions.
  2. Roll each portion into a ball and flatten slightly to shape into biscuits.

Step 4: Bake in the Idli Cooker

  1. Preheat the idli cooker:
    • Add 1–2 cups of water to the cooker and bring it to a boil.
    • Place a stand inside to keep the biscuits elevated above the water.
  2. Place the biscuits on greased idli plates or a steel plate that fits inside the cooker.
  3. Cover the cooker (without the whistle) and bake on medium heat for 20–25 minutes.
    • Check occasionally to ensure even baking.
  4. The biscuits are done when they turn firm and slightly golden.
