Ingredients (Serves 4-6):
- Ripe bananas: 2 (mashed)
- Oats (rolled or quick oats): 1 cup (ground into flour, or use as-is for texture)
- Whole wheat flour: ½ cup (optional, for structure)
- Eggs: 2 (or flaxseed substitute for vegan: 2 tablespoons flaxseed + 6 tablespoons water)
- Honey or maple syrup: ¼ cup
- Milk (low-fat or plant-based): ½ cup
- Baking powder: 1 teaspoon
- Cinnamon powder: 1 teaspoon
- Vanilla extract: 1 teaspoon
- Chopped nuts or raisins: ¼ cup (optional, for texture and flavor)
Instructions:
1. Prepare the Batter:
- In a large bowl, mash the bananas until smooth.
- Add eggs (or flaxseed mixture), honey/maple syrup, milk, and vanilla extract. Mix well.
- In another bowl, combine the oats, whole wheat flour (if using), baking powder, and cinnamon.
- Gradually fold the dry ingredients into the wet mixture until fully combined. Add nuts or raisins if desired.
2. Prepare the Rice Cooker:
- Lightly grease the inner pot of the rice cooker with oil or butter, or line it with parchment paper.
- Pour the batter into the pot and spread it evenly.
3. Cook the Cake:
- Close the lid and press the "cook" button.
- The rice cooker may switch to "warm" before the cake is done. If this happens, let it sit for 5 minutes, then press "cook" again. Repeat as needed.
- Check the cake after 30–40 minutes by inserting a toothpick or knife into the center. If it comes out clean, the cake is done.
4. Cool and Serve:
- Allow the cake to cool in the rice cooker for 10 minutes.
- Carefully remove it from the pot using a spatula or lift it out if lined with parchment paper.
- Slice and serve warm or at room temperature.
