Ingredients (Serves 4):

  • Milk: 2 cups (low-fat or plant-based works too)
  • Unsweetened cocoa powder: 3 tablespoons
  • Cornstarch: 3 tablespoons
  • Sugar: ⅓ cup (adjust to taste)

Instructions:

1. Mix Dry Ingredients:

  1. In a medium saucepan (off heat), whisk together cocoa powder, cornstarch, and sugar.
  2. Slowly add ½ cup of milk and whisk until it forms a smooth paste. This helps avoid lumps.

  1. Gradually whisk in the remaining milk, ensuring everything is well combined.

3. Cook the Pudding:

  1. Place the saucepan on medium heat.
  2. Stir continuously with a whisk or spatula to prevent lumps or sticking.
  3. As the mixture heats, it will thicken. This takes about 5–7 minutes.

4. Add Vanilla and Chocolate Chips (Optional):

  1. Once the pudding thickens, remove it from the heat.
  2. Stir in the vanilla extract and chocolate chips (if using) until smooth.

5. Serve:

  1. Warm: Serve immediately for a cozy treat.
  2. Chilled: Pour into bowls or ramekins, cover with plastic wrap (touching the surface to prevent a skin), and refrigerate for at least 2 hours.
