- Dark chocolate chips: ¼ cup (optional, for extra richness)
Instructions:
1. Mix Dry Ingredients:
- In a medium saucepan (off heat), whisk together cocoa powder, cornstarch, and sugar.
- Slowly add ½ cup of milk and whisk until it forms a smooth paste. This helps avoid lumps.
2. Add Remaining Milk:
- Gradually whisk in the remaining milk, ensuring everything is well combined.
3. Cook the Pudding:
- Place the saucepan on medium heat.
- Stir continuously with a whisk or spatula to prevent lumps or sticking.
- As the mixture heats, it will thicken. This takes about 5–7 minutes.
4. Add Vanilla and Chocolate Chips (Optional):
- Once the pudding thickens, remove it from the heat.
- Stir in the vanilla extract and chocolate chips (if using) until smooth.
5. Serve:
- Warm: Serve immediately for a cozy treat.
- Chilled: Pour into bowls or ramekins, cover with plastic wrap (touching the surface to prevent a skin), and refrigerate for at least 2 hours.
