Simplified Banana Cake Recipe (No Oats, Flaxseed, or Eggs)

Ingredients:

  • Ripe bananas: 2 large (mashed)
  • Whole wheat flour: 1½ cups (or all-purpose flour)
  • Baking powder: 1 teaspoon
  • Baking soda: ½ teaspoon
  • Milk: ½ cup (low-fat or plant-based)
  • Honey or maple syrup: ¼ cup (or sugar)
  • Vegetable oil: 3 tablespoons (sunflower, avocado, or olive oil)
  • Cinnamon: ½ teaspoon (optional, for flavor)
  • Vanilla extract: 1 teaspoon
  • Chopped nuts or raisins: ¼ cup (optional, for texture)

Instructions:

1. Prepare the Batter:

  1. In a large bowl, mash the bananas until smooth.
  2. Add honey/maple syrup, oil, milk, and vanilla extract. Mix well.
  3. In another bowl, sift together flour, baking powder, baking soda, and cinnamon (if using).
  4. Gradually fold the dry ingredients into the wet ingredients until just combined. Avoid overmixing.
  5. Add nuts or raisins if desired.

2. Prepare the Rice Cooker:

  1. Lightly grease the inner pot of the rice cooker with oil or line it with parchment paper.
  2. Pour the batter into the pot and spread it evenly.

3. Cook the Cake:

  1. Close the lid and press the "cook" button.
  2. If the rice cooker switches to "warm" before the cake is done, wait 5 minutes and press "cook" again. Repeat as needed.
  3. The cake will take about 40–50 minutes to cook. Insert a toothpick into the center to check doneness—it should come out clean.

4. Cool and Serve:

  1. Let the cake cool in the rice cooker for 10 minutes.
  2. Carefully remove it and transfer it to a cooling rack.
  3. Slice and serve warm or at room temperature.
